Culina Chilli Garlic

CHILLI JUMBO PRAWNS & AUBERGINES

Ingredients (for 4 people):

  • 2 fresh aubergines
  • 1 bag of mixed salad leaves
  • course sea salt and pepper from the mill
  • 16 large jumbo prawns, unpeeled with the intestinal tract removed
  • Culina Chilli Garlic oil

Preparation

  1. Steam the halved aubergines in a basket for 10 minutes with the cut side facing upwards, then allow them to cool a little, wrapped in kitchen foil.
  2. Fry the jumbo prawns in a large frying pan with some Culina Chilli Garlic oil until they are a lovely, pinky red.
  3. Arrange the salad on the (oblong) plates.
  4. Cut the aubergines into cubes and mix them carefully with the Culina herb dressing and then add salt and pepper to taste.
  5. Arrange this mixture onto the plates with the lettuce.
  6. Put the jumbo prawns on top and serve immediately.
